Hand-picked grapes, VIP treatment right from the start and the rest is pure pinot noir perfection. After sorting them in the vineyard, the Sea Smoke Team gently removed the stems after a night chilling in the cold room. On the sorting table, they made sure to toss out any tough bits (‘jack stems’—those aren’t invited to this party).
The grapes got a five-day beauty soak in open-top fermenters before cultured yeasts joined in to kickstart a slow, steady fermentation. Twice a day, we gave them a gentle stir (manually, of course), and they soaked up all the good stuff for about two weeks. After fermentation, they drained off the wine and pressed the rest at super low pressure to keep any bitterness far, far away.
the wine had settled and taken a breather overnight, it was moved to barrels—no shortcuts, no sneaky filtering or fining.
The result? Southing is all about balance and grace. Think fresh strawberries, rose water, Rainier cherries, and just a hint of warm baking spices. The smooth tannins and a kiss of minerality pair perfectly with the vibrant, cool-climate acidity that makes our estate vineyard so special. Cheers to that!
