With a distinctive balance of bright cherry notes and hints of red berries, this wine is big, bold and complex. The grapes are picked from hilly areas throughout Provincia di Pavia at peak maturity in the second and third weeks of September. Fermentation takes place over 6-8 days under controlled temperatures of 30°C in small stainless steel vats. The Cavit Collection Pinot Noir is then is placed in larger oak barrels where it rests on its lees (skins) until release.
This pinot noir is versatile when combining with food. Enjoy with fish such as salmon, tuna and swordfish; or pair it with grilled or roasted red meats, poultry, flavorful vegetarian entrees, and risottos for a delicious compliment.
